Stone Fruit / processing line

Peach Processing Line

Depicted route: Peach puree

Reference-based conceptual peach puree factory layout showing receiving, fruit-specific preparation, product treatment and packing interfaces
Equipment-reference-based conceptual process visualization. The depicted route is an illustrative arrangement; machine selection, product treatment, dimensions and hygienic zoning require project-specific engineering.

Peach purée development should begin with the purchased fruit type, maturity and stone behaviour. Pitting, skin control and the desired nectar or fruit-base texture form one linked preparation brief. Sort ripe peaches, wash and remove stones before refining the flesh. Define whether skin is removed early or separated during pulping. Purée can feed a nectar or jam formulation, but these endpoints need different solids and texture targets. Assess pit fragments separately from normal skin and fibre residue.

Raw material and product boundary

Product directions

  • purée
  • nectar base
  • jam

Incoming material considerations

  • Are the incoming peaches clingstone or freestone, and how does flesh attachment change the selected pitting approach?
  • Does the target purée permit peel colour, and what pit-fragment rejection, smoothness and oxidation limits must the finished sample meet?
  • Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.

Process flow: preparation to product

  1. 01

    Inspect and size

Equipment duty: Fruit grader and inspection conveyor

Identify accepted peaches and remove unsuitable fruit.

Record the variety, firmness and size distribution because they affect the preparation demonstration.

  2. 02

    Clean the fruit

Equipment duty: Washer and rinse transfer

Clean the outside before pitting and flesh handling.

Provide a controlled reject route and prevent dirty wash water from reaching the prepared purée.

  3. 03

    Separate the stone

    Equipment duty: Peach-compatible destoner

Recover flesh without accepting an undefined stone-fragment load.

Examine stones and product separately, including flesh retained with the stones.

  4. 04

    Pulp and manage skins

Equipment duty: Pulper and skin-separation arrangement

Develop the edible flesh fraction for the intended ingredient.

Agree whether visible skin specks are acceptable before selecting peeling or refining operations.

  5. 05

    Refine the purée

    Equipment duty: Adjustable finishing unit

    Set texture and coarse-particle character.

The target for nectar base, baby-food ingredient or a fruit preparation may differ; the product specification must identify the actual use.

  6. 06

    Buffer and route

Equipment duty: Covered product tank and suitable transfer pump

Connect the approved purée to treatment, optional concentration and filling.

Do not describe all downstream routes as included merely because a purée can be produced.

  7. 07

Specify preservation around the actual product

Equipment duty: Selected treatment unit, controlled transfer and process instruments

Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.

The purée or nectar base route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.

  8. 08

Fill, identify and verify the packed ingredient

Equipment duty: Compatible filler, packaging interface and lot-identification station

Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.

The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.

Equipment composition and selection

Fruit grader and inspection conveyor

Control the incoming-material presentation before preparation.

Selection basis: Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine.

Peach-compatible destoner

Pitting and flesh finishing.

Selection basis: A pitting demonstration should account for stone fragments, retained flesh and the rejected fraction. Additional recovery from stones must not compromise the finished product acceptance criteria.

Pulper and skin-separation arrangement

Create the agreed intermediate condition for downstream equipment.

Selection basis: Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material.

Product buffer and transfer system

Connect preparation, treatment and filling without assuming all sections run at the same rate.

Selection basis: Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled.

Preservation, packaging and cleaning interfaces

Complete the declared process boundary.

Selection basis: The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification.

Packaging and storage interfaces

Specify whether the purée or nectar base is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.

Information for an engineering brief

  • Demonstrate accepted fruit types at their size and maturity limits, with separate product and rejected-stone measurements.
  • Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
  • Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
  • Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.

Quality, cleaning and separate streams

Quality observations

  • Check residual hard material, skin specks, colour and consistency. Use identifiable samples spanning the accepted incoming firmness range.
  • Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.

Separate material streams

  • Keep stones and kernels segregated from edible purée. Collect skins and refining rejects according to their declared destination, without assuming co-product value.

Cleaning and changeover

  • Inspect pitting surfaces, screen openings and exposed-flesh transfers. Cleaning access must address both hard fragments and adhering soft solids.
  • Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.

Peach and apple juice

Where this route differs from the site's primary line

An apple line separates extraction, clarity and concentration into different decisions. The same distinction is useful here: first define the edible feed and the product to be recovered, then specify any refinement, concentration and packaging. The sequence below describes this material rather than assuming that an apple press or clarification setting transfers unchanged.

Pits have to be managed before fine processing of stone fruit. Compared with an apple mill and press, define a positive stone-rejection boundary and decide whether skins belong in the purée.

Questions about this processing route

What changes for a nectar-base project?

The required purée texture, formulation interface and final treatment route must be defined. Producing edible peach flesh is only the preparation stage, not a complete specification for a finished nectar.

Should a small screen be selected first?

Begin with the product’s texture and hard-particle limits. Refining severity should then be evaluated for the actual fruit, because the smallest available opening is not automatically the best finished-product choice.

What should a useful peach trial establish?

Demonstrate accepted fruit types at their size and maturity limits, with separate product and rejected-stone measurements. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
