THE PROCESS DUTY

Recover aroma compounds that would otherwise leave with vapour streams.

Apple aroma is a complex mixture of volatile compounds. During deaeration, heating and evaporation, these compounds can be carried into the vapour. An aroma recovery system condenses and concentrates a fraction so it can be returned to the concentrate or used in product formulation. The recovery rate, concentration and return point are product-specific.

IN THE LINE

What comes before.
What comes after.

The equipment is only useful when its feed and discharge are defined. These adjacent duties are the first interfaces to review.

WORKING PRINCIPLE

How the machine works.

The explanation starts with the material and the process, not a catalogue description.

01

Recover from the right stream

Aroma can leave at deaeration, heating and the early evaporation effects. The recovery system should be connected to the stream that carries the compounds of interest. Recovering from a late-stage condenser may capture a different profile.

02

Concentrate the aroma fraction

A recovery column or rectification step increases aroma concentration in a small stream. The design depends on the volatility of the target compounds and the allowable water content. The recovered fraction must be stable and compatible with the product.

03

Decide the return point

Aroma may be returned before or after final concentration, or held as a separate product. The return point affects flavour, microbial risk and process complexity. Agree it with the product team before fixing the equipment scope.

04

Design cooling and cleaning

Condensers need cooling capacity and a route for non-condensable gases. Recovery columns and condensers also need cleaning access. Aroma-rich streams can support microbial growth if left in the system, so holding and cleaning conditions matter.

WHERE IT FITS

Good fit when...

  • Apple concentrate lines where aroma is part of the product specification
  • Evaporators with a vapour stream suitable for recovery
  • Projects evaluating aroma return versus a changed flavour profile

WHAT TO WATCH

Not the right answer when...

  • Products that do not require aroma recovery
  • Systems without cooling, condensate or cleaning provisions
  • Projects expecting recovery to correct poor fruit or process quality

CONFIGURATION OPTIONS

The machine is configured,
not picked from a shelf.

These are the choices that change the equipment scope. The approved datasheet fixes the final selection.

01

Recovery column

Column type and stages selected around the vapour and target aroma fraction.

02

Condenser

Cooling medium, surface area and condensate collection defined.

03

Concentration

Rectification or another step to increase the aroma fraction.

04

Storage and return

Tank, dosing and return point for the recovered fraction.

05

Cleaning

CIP or manual cleaning for the column, condenser and holding tank.

SELECTION FACTORS

What actually changes
the recommendation.

Bring these points to the equipment discussion. They are more useful than a single throughput number.

01

Aroma source

The vapour stream and its composition determine the recovery potential.

02

Target product

Whether the aroma is returned, sold separately or not recovered.

03

Cooling capacity

Condenser duty is a project utility requirement.

04

Hygiene and holding

Aroma fractions need defined storage, cleaning and use-by conditions.

TECHNICAL FAQ

Questions buyers
actually ask.

If your question depends on the fruit, product or site, include the conditions in the enquiry rather than relying on a general answer.

Send a project enquiry
Is aroma recovery necessary for apple concentrate?

Not always. It depends on the product specification and market. Some products benefit from recovered aroma; others accept the profile after concentration. The decision should be made before the evaporator scope is fixed.

Can recovered aroma be added back to NFC juice?

That depends on the product definition, local rules and the process. Aroma recovery is more commonly associated with concentrate production. Any addition must be consistent with the product standard and labelling requirements.

How much aroma can be recovered?

Recovery depends on the volatile compounds, vapour conditions, column and condenser design. There is no universal percentage. Pilot or supplier data should be tied to the actual stream and product.

Does aroma recovery improve fruit quality?

No. It can capture volatiles that would otherwise be lost, but it cannot correct poor fruit, incorrect maturity or process damage. Fruit selection and process control remain the foundation.
