Berries & Small Fruit / processing line
Blackberry Processing Line
Depicted route: Blackberry puree

Blackberry preparation must protect delicate fruit while making an explicit decision about seeds. A seeded fruit base, smooth purée and separated juice are distinct product targets, not successive grades of the same specification. Sort and clean blackberries, then pulp or press according to the chosen product. Screening determines the amount of hard seed material retained in the flesh. A juice route adds separation of suspended solids, while a jam route may deliberately keep a coarser fruit structure.

Incoming material considerations
- What seediness will the intended consumer accept, and should the finisher remove seeds fully or preserve part of the berry texture?
- Which ripeness grades and varieties supply the plant, and how should trials balance colour extraction, coarse residue and saleable pulp recovery?
- Define incoming state, variety, maturity, accepted defects and supply interruptions in the purchasing brief. A proposed line should be demonstrated with representative commercial lots rather than a single ideal sample.
Process flow: preparation to product
- 01
Inspect delicate lots
Equipment duty: Shallow receiving and inspection conveyor
Remove unsuitable berries before they are combined.
Check handling damage and the condition of leaking fruit rather than treating all liquid in the receiving bin as usable juice.
- 02
Clean gently
Equipment duty: Gentle berry washer and drain screen
Remove debris without unnecessary fruit breakup.
Demonstrate drainage and fruit retention using the softest accepted berries.
- 03
Prepare the edible feed
Equipment duty: Gentle crusher or pulper
Open the fruit for the chosen purée or juice route.
A controlled feed helps distinguish intentional pulping from uncontrolled damage during transfer.
- 04
Set the seed objective
Equipment duty: Seed-separating finisher or product-specific press
Recover the desired edible fraction while managing seeds.
Compare a seeded base and a smoother ingredient against different acceptance samples.
- 05
Review coarse particles
Equipment duty: Secondary finishing screen where justified
Remove unwanted coarse material from the selected stream.
Do not assume the smallest screen gives the best colour, mouthfeel or usable recovery.
- 06
Buffer the accepted ingredient
Equipment duty: Covered product vessel and suitable pump
Supply a defined texture and consistency to the downstream section.
A juice-concentration project should be specified separately from a thick fruit preparation.
- 07
Specify preservation around the actual product
Equipment duty: Selected treatment unit, controlled transfer and process instruments
Confirm the measured product composition, particulate load and intended storage chain before the treatment and filling arrangement is selected.
The seed-controlled purée or juice route needs its own validated process. A drawing, a heat-exchanger name or a successful extraction trial does not establish a safe treatment schedule or a finished shelf-life claim.
- 08
Fill, identify and verify the packed ingredient
Equipment duty: Compatible filler, packaging interface and lot-identification station
Match the approved ingredient to the selected package and handling conditions. Record the production lot and the conditions required by its defined distribution route.
The filling boundary belongs in the project specification: container format, product-contact interface, filling hygiene, storage and the downstream user’s receiving requirements must agree before commercial acceptance.
Equipment composition and selection
Shallow receiving and inspection conveyor
Control the incoming-material presentation before preparation.
Selection basis: Check actual lot condition, peak arrivals and the accepted size range. Provide a sample/reject point that can be operated without obstructing feed to the next machine.
Gentle crusher or pulper
Gentle handling and seed management.
Selection basis: Inspection, handling damage and separation of small seeds deserve separate acceptance criteria. Juice, seed-containing fruit bases and smooth purées should not be judged against the same texture target.
Seed-separating finisher or product-specific press
Create the agreed intermediate condition for downstream equipment.
Selection basis: Agree an acceptance sample, a measurable particle or separation target and a reject-handling method. Select contact parts and access arrangements after trials with representative material.
Product buffer and transfer system
Connect preparation, treatment and filling without assuming all sections run at the same rate.
Selection basis: Record viscosity, particle character, temperature envelope and expected stoppages. Confirm drainability, sampling points and how unaccepted or interrupted product is identified and handled.
Preservation, packaging and cleaning interfaces
Complete the declared process boundary.
Selection basis: The quoted scope should identify included instruments, services, containers, hygienic connections and validation responsibilities. An item list without these interfaces is not a complete line specification.
Packaging and storage interfaces
Specify whether the seed-controlled purée or juice is supplied as a chilled, frozen, otherwise treated or aseptically handled ingredient, as applicable to the developed product. Package material, closure, fill conditions and distribution are a connected system. Any claimed ambient stability or shelf life requires product- and package-specific validation; the process introduction does not set treatment temperatures or holding times.
Information for an engineering brief
- Compare seeded and smoother product options using representative berry condition and the customer’s actual final application.
- Provide the intended finished-product specification, representative raw-material samples, daily operating pattern and seasonal peak load.
- Identify available utilities, factory layout, drainage, reject collection and the exact inlet/outlet conditions of equipment supplied by others.
- Agree trial acceptance criteria and define the preservation, filling, cleaning and commissioning responsibilities before finalising the equipment scope.
Quality, cleaning and separate streams
Quality observations
- Check seed fragments, mouthfeel, colour and consistency after the intended downstream handling. Keep the accepted incoming softness with the trial record.
- Define the sampling location, sample preparation, measurement method and acceptable variation. Retain traceable comparisons through the intended downstream route; a favourable immediate sample is not proof of storage stability.
Separate material streams
- Separate seed-rich and skin-rich rejects from the product. Any secondary recovery must be labelled and evaluated before it is combined with the main ingredient.
Cleaning and changeover
- Berry seeds and pigmented pulp need accessible screens and seals. Cleaning verification should consider both retained solids and visible colour carryover.
- Assign cleaning responsibilities to the open preparation zone and the closed product circuit separately. Confirm which parts require removal or inspection and how cleaning effectiveness will be demonstrated with the actual product soil.
Blackberry and apple juice
Where this route differs from the site's primary line
An apple line separates extraction, clarity and concentration into different decisions. The same distinction is useful here: first define the edible feed and the product to be recovered, then specify any refinement, concentration and packaging. The sequence below describes this material rather than assuming that an apple press or clarification setting transfers unchanged.
Berry juice may enter clarification or concentration, but small seeds, delicate skins and coloured pulp need different handling from milled apples. Compare pressing trials and purée texture separately.
Questions about this processing route
Must blackberry seeds be completely removed?
Only if that is the specified product. Some fruit bases deliberately retain seed character; a smooth ingredient requires a different separation objective and an acceptance sample.
Can a high-colour sample prove the process is finished?
No. Colour is one quality attribute. Seed fragments, particle character, flavour and the required preservation and packaging route still need evaluation.
What should a useful blackberry trial establish?
Compare seeded and smoother product options using representative berry condition and the customer’s actual final application. Record incoming material, accepted feed, finished ingredient and each reject stream separately. Keep settings, samples and analytical methods with the trial record so the result can be compared with subsequent seasonal lots.
